At the tail end of summer (who am I kidding? I probably have about 2 more months of summer in California!!) I start to get one last itch for fruits, cold snacks and yummy delicious treats you might avoid during the other seasons of the year…
If I was being completely honest, my little family of three has the tendency to go out for dessert treats and sometimes that includes McDonald’s fries with an ice cream cone which isn’t always the cheapest or healthiest option, especially with a little one who needs nutritious foods all day long.
My husband, Erik, is great at coming up with fun snacks, desserts and meals at home because he used to work in food service. He is also an artist professionally so I feel like that gives him a one-up on me when it comes to creativity. This is his special treat he came up with the other night. I love that he just opened our fridge and freezer and found all of these ingredients- no extra shopping trip needed!!
Here we have a wonderful and delicious, nutritious and cheap dessert.
1 cup | Frozen or Fresh Berries
.5 cup | Cool Whip (can substitute yogurt or ice cream)
1.5 cups | Milk (almond milk was used in this one!)
Add all into the blender and start blending.
You may have to pause it and mix it a bit then blend it more. Repeat.
Add a little more milk as needed
Once all of the goodies are smoothie texture, pour and enjoy!
*The next evening (once the baby was asleep) we made the same smoothie and added some yummy chocolate pieces and it tasted a million times more delicious- a much more exciting option if you use this as an in-home date night treat.*
